Very interesting experience, menu limited and changes almost every day, but very delicious, desert are limited. Steak was great, tuna tartar excellent. Cesar was kind a creative and unique. Not like usual. I would prefer stick to the usual recipe with romaine lettuce. But it was a nice experience.

Thistle was an absolute dream. The best food during our trip in Oregon and the most incredible chef and server. The gnocchi was perfectly textured, light, but rich and the rockfish was perfection. My family is from New England and our most frequent complaint is how even nice restaurants lack consistency and usually overcook white fish. Thistle nails it. Perfectly seasoned, perfectly light and flaky and accompanied delightfully with charred book choy and fennel to complement. Flavorful without overpowering so you can still enjoy the fish itself. The cocktail program is also outstanding and we loved every single one along with the cozy, intimate ambience overlooking the hearth. Made us feel like part of the family. I could not recommend this restaurant more; will be back any time I’m in Oregon.

Absolutely incredible dining experience at Thistle. As a solo female traveler, I couldn’t have felt more welcomed. From the moment I sat down, it felt less like dining at a restaurant and more like being invited into someone’s home for dinner. Patrick was such a warm, thoughtful server, and even the chef came out to chat and engage with guests throughout the evening. By the end of dinner, I was talking and laughing with the tables next to me like we’d all known each other for years. Everything was phenomenal. The local Oregon oysters were some of the best I’ve ever had! I don’t think I’d ever tried Oregon oysters before, and now I’m ruined. The rockfish was incredible, perfectly fresh and beautifully prepared, and the chocolate cake with cream cheese frosting was the perfect ending. Patrick paired wines with both the rockfish and dessert, and every recommendation was spot on. I also loved the constantly changing chalkboard menu focused on seasonal, local ingredients. You can genuinely feel the care and passion behind every detail here. If I lived in McMinnville, I’d honestly be here once a week. One of the best dining experiences I’ve had in a very long time. Five stars without hesitation.

Thistle was a delicious dinner and an awesome experience. We really appreciated the small, regularly changing menu. The chef was very engaged in our dining experience, sharing how he had gotten many of the ingredients at the market earlier that morning. The Summer Fog cocktail was delicious, as were the wines we tried by the glass: a lovely local Rosé as well as a Txakoli. The rockfish was an exquisite dish. The fish was insanely delicate, and the flavors were out of control—just really a beautiful, wonderful dish. We don't often order steak tartare, but thought this was delicious. And the salmon candy was also fun and so flavorful and great texture. The serving staff is well-coordinated. We loved the really small, intimate feel of it, although that might be the one downside. There's a row of three two-top tables that are very close, and we were in the middle. It wasn't an issue for us, but I can imagine some people might not love this. Overall it was a great spot. Love what they're doing!

Hard 5/5 for me. The most memorable dinner experience I’ve had in a long while. Everything was beyond perfect. Our server (fellow with glasses and tatts and lives with cats) was phenomenal and used his discretion (per our request) to choose our wine and main course. The service was not just perfect in a “my water glass was always full way” - but just felt very sincere. These folks know what they’re doing but would never talk down to anyone. The power went out for about 10 seconds, which I felt was the perfect opportunity to tell my bf I love him for the first time. I will always remember my (first) time dining at thistle. ❤️❤️

We had a wonderful meal here! This restaurant features an open kitchen that allows for interaction with the chef. It is clear how much pride and attention goes into each dish and our meal was so well balanced and flavorful. My husband had the mole, which was so deep, deliciously chocolatey and flavorful, and I had the fish which was delicate and vibrant. The menu is seasonal and showcases local ingredients. We would absolutely come again.

What a culinary experience! The owner is the server, expeditor, seater, busser, just a Mr Do Everything! The chef is super talented and came out and said Hi to all the tables. Highly recommend and can’t wait to visit again in the future!

What a perfect meal! The scallops were cooked medium warm to a tender perfection with the ceviche adding a little acidity. I once had a wonderful scallop with vanilla emulsion, coffee essence, and Bacon at Gordon Ramsay's Petrus - and Thistle's scallop albeit a different flavor profile wins the battle of the perfect scallop dish! The tender confit rabbit was also perfectly cooked with a light hollandaise sauce and pickled leek to balance the pomme puree. The chocolate stout cake was a good balance to the more heavy frosting. Coming back tomorrow as should you!

The Thistle team is absolutely incredible and the food is ridiculously good. It was such a treat to receive such amazing service, the chef and owner both were attentive, kind and fun to talk to. We tried 7 different things off the menu, and each one was unique and delicious. The drinks were the cherry on top! Thank you, Thistle! You made our anniversary dinner a very memorable one. We can’t wait to return!
